Fucina, the Italian restaurant in the heart of Marylebone, will open Panetteria by Fucina on 1st February.
The organic delicatessen and bakery, headed up by ex-Princi Head Baker Massimiliano Porta, will stock the Italian artisanal grocery items, along with freshly made bread, pastries and special blends of coffee, as well as feature fresh gelato and pasta making rooms.
Guests will be able to start the day the Italian way stood at the counter and enjoy a choice of three different coffee blends, all specially created for the Panetteria, along with cold-pressed juices, fresh pastries and breakfast pizzas.
Massimiliano has developed five different breads, using stoneground, wholemeal naturally slow-fermented dough, to make sandwiches that will be filled at lunch with meats taken from Fucina’s wood-fired pit. Artisanal Italian grocery items will be sold for preparing meals at home, including the finest meats, cheeses, dried pastas, canned good, oils and vinegars.
It has been the life’s work of Panetteria by Fucina’s food buyer Andrea Orsini to forage across Italy to source the finest Italian products, which will be available to buy exclusively in the UK through Panetteria.
Guests and chefs alike can come to shop for dried pastas and pestos from Savini Tartufi, olive oils and balsamic vinegars from Alessandro Biagini, fruit confitures from Alpe Pragas, sweet treats from Giovanni Cogno and truffles from Lamorresi.
Panetteria shares the same design principles as its neighbouring restaurant with red brick detailing and impressive display cabinets from natural wood. Downstairs, customers will find a wine shop on one side and floor-to-ceiling glass walls on the other, through which they can enjoy a mini spectacle of the gelato and pasta-making processes done by the Panetteria’s chefs.
The Panetteria will be open seven days a week, serving organic goods for takeaway from morning to evening.
