Stevie Parle alongside Craft London Head Chef Anna Garcia Cortes and the team will host the second instalment of the themed monthly dinner on Thursday 13th April, to be centred around a Mangalitsa pig.
The feast will be a six-course nose-to-tail menu inspired by a pig from Stevie’s garden in Kent, one that’s been grazing happily on acorns and apples for over a year. Among the evening’s dishes, guests can expect blood pudding with cured egg yolk & milk crisp, bitter-sweet warm ham with celeriac & mustard, early asparagus with back-fat margarine & used coffee, a 5 hour wood-grilled shoulder with burnt apple, onion broth & sage, along with some indulgent back-fat fudge and birch syrup bacon for dessert.
For £45 per person, dinner will include a home-made cocktail to kick off the night, and as always, guests will be able to pair the menu with Craft London’s excellent wine list curated by Ruth Spivey. There will also be the option to add a selection of Neal’s Yard cheeses to conclude the night.
Thursday FEASTS is a new themed dinner event at Craft London that changes month by month and sees the team working alongside great British suppliers to showcase ingredients that are in season, or work in collaboration with other fantastic chefs who share a similar ethos to create unique one-off menus. Craft London Head Chef, Anna Garcia Cortes, will oversee the menu development with Stevie and the format will continue to develop over time, embracing the Craft London style of cooking and providing new and exciting experiences for guests at every visit.
