The Wellesley Knightsbridge‘s in-house tea sommelier, Leo Mattera, has teamed up with the pastry chef, Manuele Schiavowe, to create the Pa-tea-sserie at The Wellesley afternoon tea, which features an array of intricate pastries flavoured with some of The Wellesley’s most unique tea blends.
The Wellesley picks blends from the world’s prime estates to give guests the best choice from around the world. From the vanilla and amaretto flavours of the bespoke Churchill Blend, to the rose-scented tastes of the Wellesley Blend, each pastry fuses one of the hotel’s 25 blends with the delicate sweetness of each treat including:
- · A tartlet filled with diced apple and passionfruit jam, topped with a chocolate disk and covered in a ganache dome which is infused with the Churchill Blendadding a subtle aftertaste of amaretto.
- · A crème patisserie-filled vanilla savarin enriched with a homemade syrup infused with Organic Chamomile Flowers tea.
- · The macaron uses notes from the Wellesley Blend tea to create the rose-scented filling, complementing the traditional almond flavour
- · A pistachio and mango Swiss roll covered with Italian meringue and garnished with white chocolate uses the tropical hints of Midsummer Mango blend to enrich the flavour.
The pastries are served alongside a selection of handmade sandwiches, an assortment of scones and seasonal preserves with clotted cream. Afternoon Tea at The Wellesley would not be complete without the signature chocolate cigars made from filo pastry and chocolate mousse, a nod to the hotel’s impressive cigar offering.
Now in its fifth year, The Wellesley Knightsbridge serves British afternoon tea in its glamourous art-deco Jazz Lounge with live piano accompaniment.
Pa-tea-sserie at The Wellesley is served daily from 2pm to 6pm, and is available for £35pp, or £50pp including Champagne.
