This autumn, Charlotte Street will see the opening of Kink(all)y; a Georgian inspired small-plates restaurant, alongside a subterranean cocktail bar, Kinky, all within a futuristic space.
khinkali is a dumpling with a, twisted form, traditionally filled with beef, pork or lamb and a touch of parsley. Kink(all)y puts this popular Georgian dish up front while while also taking in influences from across Europe, Asia and the Middle-East.
Chef David Chelidze, of restaurant Hedonist, will create unexpected versions of these dumplings, with elegantly-presented khinkali featuring wagyu beef, butternut squash and black truffle; Madagascan prawn with matzoon sauce and tarragon; and pheasant in a wild mushroom broth, among many others.
Alongside the selection of signature khinkali will be small plates inspired by Georgia’s ancient food culture with contemporary minimalism. These include aubergine carpaccio with tahini sauce; tomato ceviche in a spicy and sesame sauce; and smoked beetroot, goat’s cheese and persimmon. On the dessert menu, there will be the likes of passionfruit and gorgonzola mousse; and homemade cream cheese topped with prunes, pecan and salted caramel.
Downstairs, guests will discover Bar Kinky: Kink(all)y’s subterranean cocktail den. Led by Andrew Pruts, part of the team behind Insider, which reached number 13 on the World’s 50 Best Bars list, Kinky will see vivid orange and violet glowing light installations illuminating dark corners, with clusters of discreet seating throughout the basement space.
The menu, ‘Enter Bar Kinky’, tells the story behind each drink and how it was created. These might include a twist on an Old Fashioned featuring honey, chocolate and ceps, Gimlet featuring gin, sesame, cucumber and tonka; and a take on the classic Margarita with tequila cacao, beurre noisette, hazelnut and citrus.
Kink(all)y opens in October.
