Abra-ca-Debora Quick Pancake Day breakfast
Get your maximum fill of pancakes on by starting early on Shrove Tuesday.
Ingredients:
- 2 Abra-ca-Debora Original Dutch Pancakes
- 6 rashers streaky bacon, snipped into pieces
- 4 eggs
- 1 tbsp sunflower oil
Method:
- Heat the oil in a frying pan and fry the bacon until beginning to colour.
- Crack the eggs into the pan and scramble.
- Whilst the mix is cooking, heat the pancakes in the microwave for 1 minute.
- Place the pancakes on warmed plates, spoon the bacon and eggs on each one and fold over.
Abra-ca-Debora Yankie Doodle blueberry pancakes
Use Abra-ca-Debora pancakes to create a Dutch twist on an American favourite.
Serves 6
Ingredients:
- 150g pack blueberries
- maple or golden syrup
- mascarpone cheese
- 1 pack Abra-ca-Debora Sweet Dutch Pancakes
Method:
- Heat the pancakes for 2 minutes in the microwave (or 10 minutes in the oven).
- Stack on a plate, layering each one with blueberries and syrup, finishing the top layer with more blueberries and syrup.
- Serve with mascarpone.
Abra-ca-Debora lemon twist pancakes
Brits love traditional lemon and sugar with pancakes on Shrove Tuesday, so here’s a twist on the classic.
Serves 6
Ingredients:
- 1 pack Abra-ca-Debora Sweet Dutch Pancakes
- 1 jar lemon curd
- few sprigs mint
Method:
- Scoop the lemon curd into a microwaveable bowl, cover and microwave for 2 minutes.
- Heat the pancakes in the microwave for 3 minutes.
- Put them on warmed plates, pour over lemon curd, roll and garnish with mint.
Abra-ca-Debora glorious glazed vegetable pancakes
You can have your pancakes all the live long day with this veggie supper dish.
Serves 4
Ingredients:
- 1 tbsp clear honey
- 1 tsp grainy mustard
- 2 tbsp oil
- 1 courgette, thickly sliced
- 1 small aubergine, cut into chunks
- 1 small red onion, cut into wedges
- 8 cherry tomatoes
- 1 orange pepper, cut into chunks
- 4 Abra-ca-Debora Original Dutch Pancakes
Method:
- Mix the honey, mustard and oil with the seasoning.
- Toss the vegetables with the honey glaze and sauté for 10-15 minutes.
- Just before the veg is ready, heat the pancakes in the microwave for 30 seconds each.
- Spoon the vegetables onto the pancakes and roll up.
Abra-ca-Debora poached pear pudding pancakes
A bit of a posh dinner party pud. What a lovely pear!
Serves 4
Ingredients:
- 4 Abra-ca-Debora Sweet Dutch Pancakes
- 4 whole pears, peeled and cored
- 1 tsp vanilla extract
- 150g golden caster sugar
- 30g butter
- 100g light muscovado sugar
- 2 tbsp golden syrup
- 142ml pot double cream
- 1 small tub mascarpone cheese
Method:
- Place the pears in a pan and fill with water until just covered.
- Add the vanilla extract and caster sugar and simmer for about 15 minutes or until pears are tender. Drain.
- In a separate pan, simmer the butter, muscovado sugar, golden syrup and double cream for about 5-7 minutes until the mix is smooth and dark golden.
- In the meantime, heat the pancakes in the microwave for 1 minute.
- Fold the pancakes into quarters and place on 4 warmed plates.
- Stand a pear beside each pancake.
- Pour over the butterscotch sauce and add a dollop of mascarpone.
Abra-ca-Debora choccy banana pancakes
Go bananas – AND nuts – for this gooey chocolate treat.
Serves 6
Ingredients:
- 200g good-quality chocolate
- 6 sliced bananas
- chopped nuts, toasted
- 1 pack Abra-ca-Debora Sweet Dutch Pancakes
Method:
- Heat the oven to 200°C and warm pancakes for 10 minutes on a baking tray, with a layer of foil between each one.
- Break up the chocolate and melt for in the microwave for 3 minutes, checking and stirring regularly.
- Divide the bananas between the pancakes and pour the melted chocolate on top.
- Sprinkle over the toasted nuts and roll up.
