Apple and cinnamon pancakes
The basics: Takes less than 15 mins to make. Makes about 12 pancakes
What you’ll need:
- 1 mug (approx 200g) of plain flour
- 1 mug (approx 200ml) of milk
- 1 egg
- 1/2 teaspoon of baking powder
- 2 tablespoons of olive oil
- 1 crispy green apple – peeled and grated
- 1 heaped teaspoon of cinnamon
- Pinch of salt
Method:
- Sift the flour, baking powder and cinnamon into a bowl
- Whisk the milk, egg and oil together and add the grated apple
- Whisk the wet mixture into the dry ingredients until the batter comes together and is lump free
- Heat a non stick frying pan with a drizzle of oil and small knob of butter. Place tablespoons of the mixture into the pan (3 pancakes if it’s a large frying pan)
- When bubbles appear on the surface of the pancakes flip them over and cook for another 30 seconds or until golden on both sides.
- The icing on the cake: Serve the warm pancakes with a drizzle of honey and a dollop of Greek yoghurt
