Caesar Salad
Ingredients
2 cloves of garlic
100ml of olive oil
2 cos lettuces, torn into rough pieces
2 anchovy fillets, rinsed
1 egg yolk
Juice of ½ fresh lemon
Handful of fresh parmesan shavings
Salt & Black Pepper, if required
Method
Mash the anchovies & garlic against the bottom of your salad bowl until you have a paste, then beat in the yolk, and gradually the olive oil until you have a thickish dressing.
Stir in the lemon juice and taste – season if necessary.
Put the leaves into the bowl and toss well to coat.
Add the cheese and toss well again.
Top with the croutons and serve immediately.
Ingredients
2 Avocado – peeled, pitted and diced
250g cooked prawns
1 bag baby leaf salad
100g diced pancetta
Sea salt & black pepper croutons
Pinch of hot chilli powder
200g cherry tomatoes
1 Tsp French Dressing
1 Tsp Balsamic Vinegar dressing
Method
In a large bowl, place in your lettuce and cherry tomatoes and mix
Add prawns & avocado and mix thoroughly
Add chilli powder depending on your taste
Add 2 Tsp of French dressing and 1 Tsp of the balsamic vinegar dressing (You can add more or less depending on what you like).
Add sea salt and black pepper croutons to salad.
Add to the salad mix.
Mix with the fork and spoon until evenly distributed
Ingredients
1 bag of mixed leaves lettuce
250g cooked chicken breast, strips
150g cooked smoked streaky bacon
½ red pepper, cut into strips
½ yellow pepper, cut into strips
1 bag of crispy onions
50ml balsamic vinegar
100g olive oil
Sea salt & black pepper, optional
Method
In a large bowl, place in your lettuce, red & yellow peppers and mix
Add chicken & bacon and mix thoroughly
Add chilli powder depending on your taste
Mix together balsamic vinegar & olive oil to make a balsamic vinegar dressing (You can add more or less depending on what you like).
Pour balsamic vinegar dressing over salad and mix with a fork & spoon.
Mix until dressing is evenly distributed.
Add salt & black pepper if required
Add sea salt and black pepper croutons to salad.
Add crispy onions to salad and serve.
600g roughly chopped tomatoes
30g of small capers, drained
1 red onion, finely sliced
1 fresh red pepper, cut into batons
2 Tsp. red wine vinegar
6 Tsp. extra virgin olive oil
1 bunch of fresh basil leaves, washed
Salt and pepper
Method
Put the tomatoes into a bowl, season with salt and pepper and mix together.
Add the capers, onion, peppers, ciabatta croutons.
Mix again with your hands to really get the flavours going
Stir in 2 tablespoons of red wine vinegar and 6 tablespoons of extra virgin olive oil.
Tear the basil leaves over the salad.
