Mare is a Mediterranean gin flavoured with four botanicals: basil, thyme, rosemary and Arbequina olive. Together with juniper, cardamom and citrus, these botanicals make a very diffeent kind of gin
50ml Gin Mare (use the 50ml cap as a handy measure)
15ml fresh lemon juice
15ml fresh orange juice
1 teaspoon of red cabbage pickle juice
1 teaspoon of clear honey
Place all ingredients in a cocktail tin and shake hard. Strain into a martini coupe. Garnish with fresh rosemary.

10ml dry vermouth (Martini or Cinzano)
1 pickled quail’s egg
Stir the gin and vermouth over ice and strain into a martini glass. Garnish with a pickled quail’s egg on a cocktail stick.

10ml fresh lemon juice
5 dashes Worcestershire sauce
3 dashes Tabasco
Salt and pepper
Stir all ingredients over ice and strain into an ice filled highball glass. Garnish with a cocktail stick of a Spanish hot pepper, an anchovy, a gherkin, an onion, and an olive.
