Halloumi Flatbread with Tracklements Tomato & Chilli Chutney
Try these simple veggie halloumi wraps with a crunchy slaw and starring a generous helping of Tomato & Chilli Chutney to make your taste buds sing! They’re a quick and easy midweek meal made for sharing.
Makes: 4
Ingredients:
500g halloumi, cut into 8 slices
1 clove garlic, crushed
Juice of half a lime plus zest
1 small red cabbage, finely sliced
1 carrot, grated
2 tbsp Greek-style yoghurt
1 tbsp mayonnaise
1 tbsp cider vinegar
½ tsp smoked paprika
4 flatbreads or wraps
Olive oil
3 tbsp Tracklements Tomato & Chilli Chutney

Method:
- Put the halloumi slices into a shallow bowl and add the crushed garlic, lime juice and zest. Mix well and leave to marinate
- Combine the red cabbage and grated carrot into a bowl
- Put the yoghurt, mayonnaise, vinegar and smoked paprika into a jug and whisk to a smooth sauce. Pour over the red cabbage and carrot, mix well
- Heat the oven to a low temperature and put the flatbreads in to warm
- Heat a tbsp of oil in a frying pan over a medium to high heat and fry the halloumi for 3 mins each side until golden
- Spread a good dollop of Tracklements Tomato & Chilli Chutney on each flatbread, spoon over some slaw and top with the halloumi and rocket
Crispy Vegetable Fritters with Tracklements Caramelised Onion Marmalade
Crunchy, golden vegetable fritters are an easy, quick and cheap vegetarian lunch or snack. This recipe uses courgettes and carrots, but you can use whatever vegetables and spices you fancy. These are real family pleasers and a terrific way to get little ones to love their veggies.
Makes: 12 Fritters
Ingredients:
3 courgettes, coarsely grated
Salt and pepper
1 free range egg
½ tsp baking powder
3 tbsp plain flour
2 carrots, coarsely grated
1 handful coriander, stalks and leaves finely chopped
1 garlic clove, crushed
Olive oil
One jar of Tracklements Caramelised Onion Marmalade
Method:
- Grate the courgette onto a clean tea towel, season with salt and set aside
- Whisk together the egg, baking powder and flour in a large bowl and season with black pepper
- Squeeze the excess water out of the courgette over the sink
- Combine the courgette, carrot, coriander and garlic in a bowl and add the batter
- Heat enough oil to just cover the bottom of a large frying pan, over a medium-high heat. When the oil just shimmers, drop in heaped tablespoons of the courgette mixture, flattening them with the back of the spoon to make fritters. Fry each one for 2-3 mins or until golden-brown on each side. If you need to cook in batches in a smaller pan, set the fritters to drain on a plate lined with kitchen paper
- Spoon the Tracklements Caramelised Onion Marmalade over the warm fritters so it gently melts. Cutlery optional …
