To celebrate Bacon Connoisseurs’ Week (18 – 24 March), Niamh Shields of food blog Eat Like A Girl, and someone who is virtually made of bacon, will be hosting two limited edition Bacon Connoisseurs’ Week Masterclasses. The classes will take place at Food at 52 Cookery School on the evenings of Wednesday 20th March and Friday 22nd March and tickets are priced at £75 each. From the intoxicating smell of grilling smoked bacon for a bacon sarnie to the interesting flavour combination of a chocolate bacon brownie, however enjoyed, the nation is a huge fan of the humble bacon rasher.

Once armed with a Bacon Bloody Mary cocktail, each attendee will learn how to become the ultimate connoisseur of quality bacon like that produced under the Red Tractor scheme. Each person will learn to make Chipotle Bacon, Bacon Fudge and Bourbon Bacon Chocolate Truffles and get to take home their creations, along with recipe cards and a bacon goody bag.

The evening of producing bacon delights will finish with a bacon dinner (of course) which mixes two British favourites – bacon and curry – in the form of a Bombay Bacon Curry dish using sweet cured unsmoked back bacon.  This dish comes from The Great Bacon Revolution recipe booklet, created especially for Bacon Connoisseurs’ Week by Fay Ripley, this year’s ambassador for great quality bacon.  The recipes use a variety of different bacon types including maple cured, dry cured oak smoked as well as the traditional Wiltshire cured unsmoked.
