The Hyde Bar Burger Collection takes diners from Morocco to France and out into the wilderness with the new offerings of luxe burgers, designed by Executive Chef Pascal Proyart.
Signatures include ‘The Luxury Collection’, showcasing Wagyu beef sandwiched in a gold leaf bun; the’Red and Black Surf and Turf’, mixing Tiger prawn with chicken, cuttlefish ink tapioca and aioli; and vegetarian burger ‘The Caprese’,which teams polenta, aubergine and mozzarella.
Chef Pascal, the man behind award-winning One-O-One at The Park Tower Knightsbridge, translates his passion for the sea into ‘The Ocean’, a burger consisting of lemon sole and Cornish crab sandwiched in an eye-popping sea-green lettuce bun.
The collection will evolve with the seasons, incorporating fresh, seasonal ingredients into new monthly menu offerings.
October gives diners the chance to be transported to the heat of the Far East with the aromatic’The Middle Eastern’,including chicken taouk, garlic, mint and tahini, or into the woods with’The Wilderness’, which features Berkshire venison topped with a double quail egg.
Chef Pascal’s French touch will be added to the collection in November with’Le Lapin A L’escargot’, featuring snails, gruyère and rabbit encased in a carrot bun.
Playful additions continue in December with’The Quack’ – duck and hoisin alongside classic accompaniments inside a sesame bun and’The Rooster’ – chicken, bacon and parmesan inside a focaccia bun.
December’s pièce de résistance, ‘The Festive Burger’, includes highlights from the traditional Christmas Dinner spread, filling an orange-sage bun with turkey, stuffing, bacon, chestnut and cranberry.
Making up the latest in the culinary pairing trend, premium whiskies from The Hyde Bar’s offering have been hand picked to complement Chef Pascal’s creations.
Noted alongside each burger, the bar recommends teaming the delicacy of the Wagyu beef in’The Luxury Collection’ with Suntory Yamazaky 12 year old single malt whisky, whilst the duck foie gras in’The Périgourdine’ pairs well with the smooth and mild Balvenie 14 year old single malt whisky.
The Hyde Bar Burger Collection is now available at The Hyde Bar, The Park Tower Knightsbridge, a Luxury Collection Hotel, open daily from 8am – 2am. Burger prices start from £17.
