I get this. Homemade snacks and meals made in a muffin tin – and anything but muffins – to feed a growing family in a healthy way. And easy peasy to prepare and bake. Being the mother of three boys, who from a young age perfected the art of slamming the front door and in one swift movement opening the fridge door simultaneously, I know where this author is coming from with Super Quick Muffin Tin Meals. I get it.
I even love the fact that American author Melanie LaDue and her publishers have gone to the (unusual) trouble of converting cups to ounces, grams and mls. It’s just a pity that they didn’t go that step further and translate a few other things like (oft-featured) Crescent Original Recipe Creations (Seamless Dough Sheet), graham cracker crumbs or a box of yellow cake mix. We could probably work it out, but will British cooks stick with the programme if they have to start searching the web for explanations?
That said there are some innovative recipes here: Chicken Burrito Bites made with wonton wrappers, Meatball Subs and Pesto Egg Mini Quiches. Some are really quick and easy, others not so. Certainly the Chicken Pot Pies, Cranberry Brie Roll-ups and the Cheesesteak Bites would make great party finger food … for grown ups.
The real novelty is using the muffin tin to shape and hold together the ingredients while they cook. There’s also plenty to satisfy the sweet tooth here: banana, cherry and chocolate pie variants, and the amazing Disappearing Marshmallow Puffs. Yummy!
I’d be more likely to pick out a few favourite recipes and work to adapt to British ingredients, then leave the book on the shelf. It’ll probably be more digestible in the U.S.
