French restaurant Aubaine is launching a vegan menu to champion Veganuary, a celebration of all things vegan throughout the month of January.

The new plant-based menu emcompasses vegetables, fruits, whole grains and legumes that bring Veganuary to life on a plate. Each dish has been designed by Aubaine’s chefs to deliver full flavours that will tempt everyone’s tastebuds.

Aubaine will be offering nine new recipes spanning three courses.

Diners can expect contemporary twists on French classics, such as beetroot & green apple tartare with avocado and mushroom bourguignon with carrot bacon, alongside modern creations such as roasted cauliflower steak with turmeric, smoked paprika and pomegranate.

The vegan desserts use the freshest ingredients, including raw 70% dark Peruvian organic chocolate, mandarin and raspberries.

Aubaine’s sommelier is carefully pairing the elements and flavours of each course with a remarkable wine; the 2016 Le Canon du Maréchal` Muscat/Viognier. The vineyard Domaine Cazes that produces the wine is the largest certified organic and biodynamic estate in France. This delightfully lively and vegan vintage is aromatic and dry on the palate, which makes for the perfect flavour pairing to the new plant-based menu.

The Veganuary menu is available for lunch and dinner across 6 central London locations.
