Carousel, Marylebone’s revolving creative hub, has announced its upcoming line-up of guest chef residencies for the autumn season, showcasing a range of both local and international chef talent.

Offering guests an opportunity to try a varied selection of cuisines and cooking styles, each of the talented guest chefs work alongside Head Chef and co-founder Ollie Templeton and his team to prepare a four or five-course dinner menu that showcases their signature style, using seasonal produce from the British Isles.

For this roster, Carousel is playing host to a unique mix of chefs hailing from a broad range of destinations. Among the highlights are Joudie Kalla, chef and author of’Palestine on a Plate’ who will be previewing dishes from her next book’Baladi’; Josh Eggleton’s Michelin-starred The Pony and Trap from Somerset who will be harnessing the West Country’s best autumn ingredients; as well as Ukrainian chef Yaroslav Artyuk from Kanapa, one of Kiev’s most famous restaurants, who will be joined in the kitchen by long standing friend, fellow chef and Carousel favourite Olia Hercules.

Carousel’s front of house team takes care of wine and cocktail pairings for each dinner, tickets for which are all priced at £39.50 per person. This autumn line-up will continue Carousel’s ethos of championing homegrown British talent old and new, alongside industry-leading chefs from across the globe.

Joudie Kalla (London, UK)

18th – 22nd September

Joudie Kalla’s passion for traditional Palestinian and Middle Eastern cooking brought her widespread acclaim with her 2016 cookbook, Palestine On A Plate, and her Carousel residency this September will see her preview dishes from her next book, Baladi (Arabic for’My Country’) which will be released in October. 

Bubala (London, UK)

25th – 29th September

Emily Heron (Head Chef at Ottolenghi) and Marc Summers (Berber & Q, The Palomar, Ceru) share two great passions: a deep love of Middle Eastern cooking, and the desire to showcase all things vegetarian. 

The Pony & Trap (Chew Magna, UK)

2nd – 6th October

Since taking over The Pony & Trap, a 200-year-old pub in rural Somerset, siblings Josh and Holly Eggleton have been awarded a Michelin star for seven years in a row. Celebrating produce from the Chew Valley and the pub’s own kitchen garden and orchard, chef proprietor Josh (a regular on BBC’s Great British Menu) has created a sustainable menu of elevated pub classics

Antonieta ‘Neta’ Fernandes Manhão (Macao)

9th – 13th October

Hailing from Macao, just across the Pearl River Delta from Hong Kong, chef Antonieta ‘Neta’ Fernandes Manhão will be coming to Carousel this October to showcase the unique cuisine of this fascinating destination. Half-Portuguese, half-Chinese, Chef Neta is a champion of Macanese cuisine, which blends Portuguese and Chinese flavours with those from Africa, India and South East Asia,

Rafael Gomes, Itacoa (Paris, France)

16th – 20th October

Brazilian Rafael Gomes cut his teeth in NYC at Eleven Madison Park and Gramercy Tavern, before moving to France to work under the tutelage of two Michelin-starred chef Mauro Colagreco at Paris’ celebrated Grand CÅ“ur brasserie. Now with his own restaurant Itacoa (named after his favourite beach back home in Brazil) in Paris’ second arrondissement, Rafael incorporates flavours from his Brazilian heritage, his time in New York and his more classical French training

Killian Crowley (Galway, Ireland)

30th October – 3rd November

Winner of the San Pellegrino Young Chef UK & Ireland award 2018, Killian Crowley is currently Chef de Partie at Michelin-starred Aniar in Galway, a’terroir based’ restaurant centred on using local Irish fish, meat and vegetables. Continuing his passion for this ethos, Killian (who has previously worked at Louis XV in Paris, Monaco’s Hôtel de Paris and Bon Bon in Brussels) has devised a Carousel menu that celebrates the Irish food scene.

Kanapa (Kiev, Ukraine)

6th-10th November

Head Chef of Kanapa, one of Kiev’s top restaurants, Yaroslav Artyuk is recognised as reinventing, modernising and refining traditional Ukrainian fare. Using innovative techniques, Yaroslav’s Carousel menu will bring a lightness to typically heavy Ukrainian meals.

Céline Pham (Paris, France)

27th November – 1st December

Following training at École Grégoire Ferrandi and experience at Saturne, Chez Aline and Septime, Céline Pham has been working in Paris showcasing her contemporary take on Vietnamese cuisine. Inspired by the delicate balance at play in Vietnamese cooking, and the various markets she has encountered on her travels, Céline’s Carousel menu will feature French-Vietnamese dishes.
