The Inedit Burger. A meeting of creative minds over meat
For me, there’s nothing much better than a really good burger and beer combo as a hump day treat.
So I was delighted to see the announcement of an intriguing three part collaboration between Ferran Adriàfrom Spain’s Damm Brewery, Jose Pizzaro who is noted for bringing his simple and authentic Spanish cuisine to the London food scene, and Scott Collins of Meat Liquor, the London burger legend who started serving from a MEATwagon in South London on Friday nights.
This is the second collaboration between Jose and Scott, and similarly to the last time, this burger consists of the flavours of Spain. I was slightly reserved at first as it was my first literal HAM-burger, an Ibérico pork capers and gherkins patty, but I was delightfully surprised. Pork can be heavy, or too rich, but this was – refreshing.
The dish’s name derives from it originating from Hamburg, Germany of course, but the way Jose delivers his burger you would think he had invented the sandwich himself.
Additional to the Ibérico meat is the super light, complimentary flavours from the cured manchego cheese, grilled onion and shredded lettuce. Topped with aioli and dusted with Spanish paprika, the burger is sealed in a good-sized signature bespoke printed MEATliquor bun.
The dish is paired with an Inedit Damm beer aromatised with coriander, orange peel and liquorice. Inedit means “Never been done beforeâ€Â, and this beer is equally refreshing with a great prickly mouth feel.
IneditMEATSJP really is the perfect pair. “It’s always good to collaborate with friends†says Jose, and what a successful collaboration this is.
The burger is available from 17 March until 22 April in 8 London MEATliquor locations, as well as José Pizarro Broadgate for £13.50, which includes the burger and a bottle of Inedit Damm.
